Lenoir, NC – Caldwell Community College and Technical Institute’s Culinary Arts program has announced the dates and menus for its fall semester installment of Caldwell Cuisine. Each of the meals will be served at 6 p.m. at the J.E. Broyhill Civic Center in Lenoir and are priced at $21 plus tax per person. The events are open to the public, but diners are required to purchase tickets prior to the event.
In addition to providing an opportunity for the community to enjoy the gourmet Caldwell Cuisine menus at a reasonable price, the events also provide CCC&TI’s Culinary Arts students a chance to apply their classroom knowledge.
Following are the dates and menus for the events:
Thursday, Sept. 12 – Korea
Starter: Kimchee Jjigae (Smoked pork belly stew, w/ onion, kimchee)
Entrée: Beef Bulgolgi (Grilled marinated beef, bibb lettuce, Korean condiments, steamed rice)
Dessert: Hotteok (Sweetened Korean pancakes, cinnamon honey, whipped cream)
Thursday, Oct. 17 – India
Starter: Spiced Cauliflower Soup (Ginger, cumin, turmeric, garlic, and coriander)
Entrée: Tandoori Chicken w/ Chole and Basmati Rice (Grilled marinated chicken with yogurt, ginger and Indian spices. Served with chick pea chole and basmati rice)
Dessert: Mango Kulfi (Traditional Indian ice cream flavored with mango and lime zest)
Thursday, Nov. 21 – Italy
Starter: Steamed Mussels -Moules a la Mariniere (Tomato, shallot, garlic, white wine, parsley, butter)
Entrée: Carne all Pizzaiola (Grilled beef fillet, rustic pizzaiola sauce, roasted broccolini with gremolata and polenta topped with fontina cheese)
Dessert: Zeppole di San Giuseppe (Zabaglione custard sauce, fresh berries, citrus zest, powdered sugar)
